Protein Power Grilled Veggie and Fruit

We’ve all heard of fruit skewers, however have you ever heard of fruit and marinated tofu skewers? All are gril ed on a keep on with make the prettiest and freshest finger meals round.

INGREDIENTS:

• 8 ounces extra-firm tofu, drained, pressed (web page 17), and reduce into 1-inch cubes 2 tablespoons tamari

• 1 tablespoon rice vinegar

• 1 tablespoon maple syrup

• ¼ teaspoon chili powder

• 1 massive candy potato, peeled and chopped into bite-size chunks 4 ounces cremini mushrooms

• 1 pineapple, chopped into chunks

• 1 purple bell pepper, chopped into massive items

• 1 yellow bell pepper, chopped into massive items

• Extra virgin olive oil, for grilling

INSTRUCTIONS:

1. Place the tofu cubes in a big bowl. In a small bowl, combine the tamari, rice vinegar, maple syrup, and chili powder collectively and pour over tofu. Marinate for half-hour.

2. Parboil the candy potato chunks for 10 minutes or till simply tender.

3. Clean the mushrooms and reduce off the ends of the stems. If a number of the mushrooms are massive, reduce into halves or thirds.

4. Skewer the tofu, candy potato, pineapple, purple and yellow bell peppers, and mushrooms onto every skewer.

5. Brush gril or gril pan with oil and set to medium-high warmth. Grill skewered greens and fruit till there are grill marks. Flip and grill the opposite aspect.
